Do your children tend to snack a lot more these days? We can relate. It feels like we are running a restaurant at the best of times. Because the snacking is so constant we like to have some healthy options to hand. Even better when those healthy options are sweet and delicious. Frozen yoghurt bark - where have you been until now?
We have only recently discovered frozen yoghurt bark and it is already a favourite among the whole family. This is the epitome of a refreshing summer snack and it is beautiful to look at too. We do eat with our eyes after all.
So what is it? Well, it's a pretty looking slab of sweet frozen yoghurt with toppings of your choice. You can whip the whole thing up in minutes and when it's perfectly frozen you can slice it in to chunks or squares and ration it out to those hungry little mouths.
You Will Need
- 500g Yoghurt (We like to use Greek style)
- 2 Tablespoons of maple syrup or honey
- Fruit/snack toppings of choice
Time needed: 2 minutes.
Frozen Yoghurt Bark
- Combine yoghurt with the honey or maple syrup and mix well.
- Empty the sweetened yoghurt on to a flat baking tray and spread evenly (ensure it will fit in the freezer). You can add foil or cling film first if you have them to hand.
- Scatter toppings on to the yoghurt as evenly as possible.
- Place tray in to the freezer overnight or for a couple of hours.
- Before eating leave it out of the freezer for a couple of minutes as it will slice more easily.
- Slice in to chunks and serve immediately.

- Chopped strawberries and chocolate chips
- Peanuts, dark chocolate and sea salt
- Raspberries and crushed pistachio nuts
- Blueberries and desiccated coconut
- Swirled peanut butter and banana slices
- Mango, strawberry and blueberries
