A delicious, easy, affordable and healthy school lunchbox recipe from Tracey Quinn.
Keeping things exciting in the lunchbox department can be difficult for parents. In many homes both parents work and packing lunchboxes is a necessity rather than something they enjoy at the end of a long day. It can be especially soul-destroying when lunchboxes arrive home barely touched and the food ends up in the bin. Fussy eating is an issue that affects so many of us.

There are so many benefits to preparing school lunch box snacks in advance. An hour in the kitchen on a Sunday could provide a plethora of healthy and delicious lunchbox fillers that won't arrive home at the end of the day. Having some go-to crowd pleasers is ideal. In our experience egg muffins go down really well with children of all ages. They are mild in flavour, easy to eat and super filling due to the high protein content in the eggs. They are also a great way to sneak in some vegetables without anyone batting an eyelid.

The best thing about this lunch box recipe is that it contains ingredients that most of us already have in the kitchen. You can change things up by adding different herbs and spices as well as substituting ham for a different meat, fish or vegetarian product. When we make this recipe we save a couple for ourselves as they make for a brilliant breakfast on the go or a snack at any time for adults.
